Like the beloved digital pet of the ‘90s, a sourdough starter requires regular attention, feeding, and just the right conditions to thrive. If neglected, it weakens and can even “die,” but with our consistent care, it grows stronger, bubbling with life and rewarding us with delicious, naturally leavened bread.
At its core, sourdough is a simple mix of flour and water, but within that mixture, wild yeast and lactic acid bacteria work together in a delicate balance. Like a Tamagotchi, the starter must be fed regularly with fresh flour and water to keep it active, much like a Tamagotchi needs feeding to stay happy.
Our well-maintained starter produces a loaf with the perfect rise, a crisp crust, and a soft, airy crumb.
This living culture is what makes sourdough so unique. Unlike commercial yeast, which delivers predictable results in hours, our sourdough starter is deeply personal, influenced by the environment, climate, and the hands that tend to it.
The process we use to bake our sourdough bread teaches patience, commitment, and intuition—qualities that modern convenience often ignores.
Ultimately, our sourdough is more than just bread. It’s an experience, a connection to history, —because unlike a Tamagotchi, our sourdough “pet” never stops responding, it keeps rewarding us with delicious historical tastes.
We bake speciality bread on order with rosemary, jalapeno & cheese or mixed seeds inclusions.
